I created these little gems this christmas as a sweet treat to enjoy over the festive season. They have now become a stape I keep in the freezer when I need a little something sweet without any nasties

Ingredients

  • 150g blanched almond meal
  • 150g dried apricots (preservative free)
  • 2 tablespoons coconut oil
  • 2 tablespoons raw honey
  • 3 tablespoons plain protein powder (optional) I use “Whey More Protein
  • pinch sea salt
  • 1 cup desiccated coconut for coating

Method

Place almond meal, apricots, coconut oil, honey and salt in a food processor

Blend until apricots are roughly chopped and mixture has combined into a sticky dough

Scoop about 35g mixture into hands and roll into balls, should make around 11

Roll each ball in coconut, pressing gently to coat

Store in freezer or fridge in a glass container. Allow to soften a little if stored in freezer before consuming

Great served alongside a coffee or herbal tea
