Gut healing gummies are a great little snack and also great for lunchboxes. You can pick your berry of choice and there are lots of cute silicon moulds in a variety of shapes. Gummies are super quick to make and store well in the fridge
Ingredients
- 100g frozen berries – strawberries, blueberries or mixed berries
- 1 1/2 tablespoons gelatin
- 1/2 cup filtered water
- 1 tablespoon honey (optional)
- 1 teaspoon lemon juice (optional)
Method
Add frozen fruit, honey and lemon to a small saucepan and bring to boil. Reduce heat and simmer for 10 minutes or until fruit is soft
Turn off heat
Meanwhile whisk gelatin into water in a small bowl and allow to bloom for 5-10 minutes
Using a stick blender or potato masher remove lumps from fruit mixture
Whisk gelatin mixture into the fruit mixture until well combined
Pour into small silicon moulds or even a flat rectangular glass dish. Place in fridge to set. Pop out from moulds or cut into squares if using glass dish
Place in a glass container in the fridge. They will keep for about 2 weeks
