This super simple dinner option has become a viral sensation due to its simplicity and deliciousness. Its a one pot wonder that you simple pop in the oven and leave for 3 hours. You can use it in so many ways and will definately become a staple to your weekly menu
Ingredients
- 1kg chuck roast (grass fed & finished)
- 3 cloves garlic
- 1 tablespoon organic butter
- 1 cup chicken or beef homemade stock
- 2 sprigs of rosemary
- sea salt & pepper
Method
Season beef generously with salt & pepper
Place whole chuck roast in a heavy based saucepan or dutch oven. You can cut roast in half depending on size of your pot
Add garlic, butter, stock and rosemary
Cover pot and place in 160 degrees C oven for 3 hours, check after 2 hours as you might need to add a little more stock if looking a bit dry
After 3 hours meat should pull apart easily with 2 forks. If not place back in oven for another 1/2 hour or until meat falls apart
Remove from oven and shred meat, if you have lots of liquid and prefer a dryer roast place pot back in oven WITHOUT the lid at 180 degrees C for around 1/2 hour
Serve with cauliflower mash, roast veggies or on a grain free wrap
