Coconut Chia Pudding

This recipe is inspired by my recent trip to Bali where they made this beautiful chia pudding. It tasted a little like a bircher muesli but without any grain. This is my re-creation of this recipe

Ingredients

  • 1 cup coconut yoghurt (I like Bondi Coconut Yoghurt)
  • 1 heaped tablespoon chia seeds
  • 1 heaped tablespoon sunflower seeds
  • 1/4 apple grated

Method

In a glass container mix the chia seeds through the coconut yoghurt

Add sunflower seeds and grated apple and mix well

Place in refrigerator for a few hours or overnight to thicken

Enjoy on its own or topped with some fresh berries
