Ginger and lemon gummies

Ingredients

  • 250ml filtered water
  • 5cm piece of ginger sliced
  • 1 tablespoon grass fed gelatin
  • 1.5 tablespoons lemon juice
  • 1.5 tablespoons honey
  • small pinch of salt

Method

Place 1/2 cup filtered water into small saucepan with ginger slices

Bring to boil then turn off heat and leave to infuse flavour for 30 minutes

Meanwhile put the other 1/2 cup water into a small bowl and mix through gelatin until well combined, leave to bloom

After the ginger water has infused, remove ginger slices. Bring ginger water up to a medium heat and add lemon juice, honey, gelatin & salt

Mix well to combine, a small whisk can help

Pour into small silicon moulds, allow to cool a little then place in fridge to set

Once set, pop out of moulds and store in an airtight container in fridge for up to 2 weeks
