Ingredients
- 1L homemade chicken stock (recipe in GAPS section)
- chopped chicken removed from bones in stock
- 2 tablespoons ghee
- 1 leek finely sliced
- 1 large stalk celery finely sliced
- 6 brussels sprout finely sliced
- 2 corn on the cob – kernels removed
- 1 carrot grated
- handful parsley finely chopped
- 2 tablespoons coconut aminos or tamari
- 1 teaspoon sesame oil
- 1 teaspoon celtic or sea salt
Method
Make stock according to recipe, remove chicken meat from wings & chop
Heat ghee in a large saucepan
Add leek, celery, brussels sprout, corn and carrot
Cook for about 5 minutes or until tender
Add 1L of chicken stock, cover and bring to boil. Reduce heat then simmer for 15 minutes
Turn off heat, add parsley, aminos, sesame oil, salt and chopped chicken
Cover and allow to sit for 10 minutes before serving
