Some days you may feel like a little sweet treat to have in between meals. These dates are filled with a nut butter of your choice and a clean chocolate topping without any nasties. If you don’t digest nuts very well I would try an activated or sprouted spread inside your dates.
Ingredients
8 medjool dates
8 teaspoon nut butter (I use sprouted ABC spread)
1/4 cup organic coconut oil
1/4 cup dutch cocoa
2 tablespoons raw honey
tablespoon boiling water
tablespoon desiccated coconut, chopped nuts or seeds for topping
sea salt
Method
To make chocolate – melt coconut oil & honey in a small saucepan until just melted. Allow to cool for 5 minutes. Whisk in cocoa and a pinch of salt until smooth.
Cut dates along one side to remove the seed
Fill dates with a spoonful of nut butter and close date back around filling
Place on a tray lined with baking paper and put in the freezer for 1/2 hour
Pour about 1 tablespoon chocolate over each date, top with a grind of salt and a sprinkle or coconut or desired topping
If you have any left over chocolate you can store in a glass container in freezer for 3 months to use for another batch of dates
Allow the chocolate dates to set in the fridge and then transfer to a glass storage container. Store in the fridge or freezer.
