Russian Custard Icecream

Russian custard is not only a delicious dessert but a fantastic gut healing food. Egg yolks are an amazing source of natural amino acids, vitamins and minerals. As part of a healing diet it is vital to include egg yolks in your daily diet. Russian custard can be eaten warm or frozen into iceream. Either way it is beautiful especially when teamed up with Stewed Apples.

  • 6 fresh organic egg yolks (very important to use quality eggs)
  • 1 tablespoon raw honey
  • 2 tablespoons ghee or cultured butter
  • pinch of sea salt
  • 1/2 teaspoon vanilla extract

You will need a glass bowl that will fit into a saucepan without touching the bottom

Put some water in the saucepan, enough to not touch the glass bowl, bring to simmer

Add all ingredients to the glass bowl

Put glass bowl in saucepan and using a stick blender, blend mixture for 3 minutes or until starts to thicken

Immediately cool the custard in some cold water in the sink, continue whisking

You can use custard straight away of pour into a glass container and freeze to make icecream
