Apple & Walnut Muffins

Muffins are one of my most favourite foods. I have created this grain free, dairy free, refined sugar free version to be gentle on the gut and a great source of fibre.

Ingredients

2 ripe bananas

2 apples – peeled and cored

1/3 cup coconut flour

1/4 cup almond flour

1/2 teaspoon sea salt

1 1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1 egg

1/4 cup macadamia oil

1/4 cup unsweetened almond milk

1/4 cup raw honey

1/4 cup sultanas (optional)

1/4 cup walnuts – roughly chopped

Method

MAKES 6 MUFFINS

Preheat oven to 180 degrees C

Place diced apples in a small saucepan with a little water to cover. Gently cook for 5 minutes or until tender. Drain and cool.

In a blender combine bananas, egg, macadamia oil, almond milk & honey. Blend for 30 seconds until combined

Add coconut flour, almond meal, cinnamon, salt & baking powder to blender. Gently blend for another 30 seconds, scrape down the sides and blend again for 30 seconds

Add the cooled apples, sultanas and walnut to the batter, mix through with a spatula.

Place batter into 6 lined muffin trays and bake for 20-25 minutes or until golden.
