Regular banana bread can be pretty heavy on fats and sugars, this version is kind to your blood sugar levels and contains healthy fats & just a little bit of sweetness.

Ingredients

2 large bananas

2 large eggs

1/2 cup coconut flour

1/2 cup almond flour

1/4 cup psyllium husks

2 teaspoons baking powder

1/2 cup coconut sugar

1/2 cup macadamia or hemp oil

1 teaspoon vanilla

1/2 cup unsweetened almond milk

Pinch sea salt

1/4 cup hemp seeds

Method

Preheat oven to 180 degrees C.

Place bananas, eggs, vanilla, oil and almond milk in a food processer and blitz together.

Add coconut flour, almond flour, psyllium, baking powder, sugar and salt. Blend together, scraping down sides to form a smooth batter.

Add hemp seeds and mix through with a spatula.

Line a small loaf tin with baking paper. Pour in batter and smooth into tin.

Bake for 30-40 minutes until golden brown and a skewer comes out clean.

Serve with a dollop of organic butter.
