Beetroot is a beautiful vegetable that helps to detox the liver. A great way to add them to your diet is to grate them into muffins. They give the muffins a vibrant red colour and moist texture.

Ingredients

2 large bananas

2 large eggs

150g grated beetroot

1/2 cup green banana flour

1/2 cup almond flour

1/4 cup psyllium husks

2 teaspoons baking powder

1/2 cup coconut sugar

1/2 cup macadamia or hemp oil

1/2 cup unsweetened almond milk

Pinch of salt

Method

Preheat oven to 180 degrees C.

Place bananas, eggs, grated beetroot, oil and almond milk in a food processer and blitz together.

Add green banana flour, almond flour, psyllium, baking powder, sugar and salt. Blend together, scraping down sides to form a smooth batter.

Line a muffin tray with 10 patty papers. Spoon in mixture.

Bake for 20 minutes.

Makes 10-12 muffins
