Basic Chicken Stock

Short cooked meat stocks are the most important thing to include in your diet to heal and seal the gut lining. They contain everything that the body needs to repair and rebuild the gut. These stocks contain collagen, gelatin and elastin which are the building blocks of connective tissue. Make big batches at a time and freeze so you always have some on standby

  • 6-10 chicken wings (depending of size of pot)
  • 2 heaped teaspoons sea salt
  • 5 peppercorns
  • filtered water to cover all ingredients by 2 inches (about 1 litre)
  • 1/2 onion cut into wedges
  • 2 cloves garlic
  • 5cm piece of ginger, peeled & sliced

You will need a heavy based saucepan or dutch oven

Place bones in pot with salt and filtered water to cover bones by 2 inches

Bring to boil and skim off skum from top of water. Add additional ingredients, reduce heat and simmer for 2 hours.

Strain stock

Either discard wings or remove chicken from bones and use to make soup

NOTE: Stock should have a jellylike consistency once cooled

  • Warm up stock and drink in a mug (always heat stock in a saucepan not the microwave)
  • Cook some chopped veggies in the stock until soft, add back the chicken meat and eat as a soup
