Nectarine & Chia Pudding

  • 3 yellow nectarines (peeled and diced)
  • 1 tablespoon water
  • 3/4 cup organic yoghurt (homemade or Barambah Organic)
  • 1/2 cup coconut milk (Coco Quench)
  • 2 tablespoons chia seeds (more if you like a thicker pudding)
  • 1 teaspoon vanilla extract
  • 1 tablespoon RAW honey
  • Paleo granola for topping (eg Farmer Jo’s)

Place nectarines and water in a small saucepan and bring to boil. Reduce heat and simmer for 5-10 minutes or until fruit has broken down. Allow to cool and refrigerate.

Place yoghurt, milk, chia seeds, vanilla and honey in a bowl and mix to combine well.

Place in fridge to thicken for around 1/2 hour then pour into individual glass jars. Allow to set in fridge for 2 hours of overnight.

Top with cooled fruit and granola.

Makes 2 puddings.
