Gut healing stocks are a great way to soothe and heal an inflamed gut. Meat stocks have gelatin and collagen that are powerful ingredients to heal a sensitive gut.
Ingredients
STOCK
Small organic chicken cut into pieces
1 carrot – sliced
1 stalk of celery – sliced
½ leek – sliced
1 clove garlic
5cm piece of ginger
Handful chopped parsley or coriander
1 tablespoon apple cider vinegar
1 tablespoon celtic salt
1 tablespoon dried porcini mushrooms
EXTRAS
1 large zucchini – spiralized
1 cob of corn – kernels removed
Method
In a heavy based saucepan combine all stock ingredients. Cover with 4-5 cups of filtered water, enough to just cover bones.
Bring to boil, reduce heat and simmer for 2.5 hours.
Remove chicken, discard bones and return shredded chicken back to stock.
Add zucchini and corn and simmer for 5-10 minutes until veggies are just tender.
Season with salt and pepper if necessary.
