A quick and easy breakfast or snack idea. Enjoy on its own or layer up with coconut yoghurt, granola and extra berries. Full of fibre and just sweet enough.
Ingredients
1 cup frozen berries (preferably organic)
1/4 cup chia seeds
1/2 cup coconut water
2 teaspoons honey
Squeeze lime juice
Method
Place frozen berries, coconut water, honey & lime in a small saucepan and bring to boil. Reduce heat and simmer for 10 minutes.
Mash berries with a fork. Add chia seeds and mix well to combine.
Allow to sit for 5 minutes to thicken slightly.
Pour into small glasses, bowls or jars. Place in fridge to set.
Top with coconut yoghurt, fresh berries & granola
