Hemp Protein Pancakes

Filled with fibre & protein, these light and fluffy pancakes hit the spot without sending your blood sugars sky high.

Ingredients

1 tablespoon hemp protein powder

1 tablespoon flax meal

1 tablespoon psyllium husks

1/4 cup unsweetened almond milk

1 egg

1/2 teaspoon baking powder

Pinch sea salt

1/2 tablespoon olive oil

TOPPINGS

Mixed berries

Coconut yoghurt

Drizzle of maple syrup

Sprinkle of mixed seeds

Method

Combine hemp powder, flaxmeal, psyllium, baking powder & sea salt in a small mixing bowl. Whisk well to combine.

Add egg & almond milk and whisk well to form a smooth batter. Allow to sit for 5 minutes to thicken.

Heat oil in a frying pan and pour in batter to make 2 pancakes.

Once brown flip pancakes, cover frypan for a couple of minutes to cook pancakes through and puff up.

Top with favourite toppings, berries, seeds, yoghurt and just a drizzle of maple syrup.

Makes 2 pancakes (1 serving)
